  3. Rehydrate the rice paper sheets by placing one sheet at a time into a shallow dish with warm water.

  4. Leave the sheet in the water for a few seconds, then remove it and place it onto a flat work surface. Leave it for a minute or two, then place around two tablespoons of beans and corn mix and a few slices of capsicum and avocado in the middle of the bottom third of the sheet.

  • The rice paper sheets are ready to fill and roll when they are pliable and a little sticky.
  • Because they are a little sticky, some may tear a bit as you roll them, but don’t worry; just overlap and continue to roll.
  • I have used the 22 cm / 8 ½ inch rice paper sheets since they are easier to work with compared to sheets that are smaller or larger.
