How To Make Lemon Pastry Crèmes Girl Scout Cookies Step By Step

Combine the softened butter, cream cheese, and lemon zest in a bowl.

Add the sugar and mix well.

Add the flour and mix to form a dough.

Wrap in plastic wrap and chill for 2 hours.

Preheat the oven to 180℃ / 350℉. Roll the dough to approximately 3 mm / ⅛ inch thickness, use a cookie cutter to cut out the cookies, and place them on a baking sheet lined with parchment paper. Roll the remaining dough again and cut out more cookies using the cookie cutter until all the dough is used. Bake for 8 to 10 minutes or until firm, then allow them to cool.

In the meantime, prepare the filling by mixing the butter with the confectioners’ sugar and lemon juice until creamy. Leave aside a bit of sugar to dust the cookies.

Spread the filling on the bottoms of half the cookies and top with the remaining cookies. Dust them with confectioners’ sugar and enjoy!
